Plum Really

Half Chicken 2 tbsp butter, softened  1 onion, sliced into discs  1 Plum, pitted and sliced, skins on  ½ jar NJS Plum, Really!  ½ cup broth or water  Spice rub: 1 tsp each ginger salt pepper onion powder


~Preheat Oven to 425 degrees~ 1. Place sliced onions and plums onto bottom of baking dish, mix spice rub together 2. Pat the chickens dry with paper towels and rub under the skin with the butter to keep the chicken nice and moist, then rub the spice mixture under the skin and over the outside of chicken  3. Arrange the chicken skin side up onto onions and plums and pour the water/broth into bottom of pan and bake for 15 minutes at 425 degrees  4. Drop temperature down to 400 and continue to cook for 30-35 more minutes and roast until the thigh meat registers 165 degrees  5. Take chicken out and turn oven up to Broil, brush the chicken evenly with a thick layer of the Plum, Really! (you’ll have some remaining to brush on later) and place back in oven and continue to roast until the glaze is golden brown, about 2-3 minutes (watch carefully) 

Helpful Notes:

You could use chicken breast or thighs in place of the half chicken, just adjust cooking time
