Fig Stout

FIG STOUT STEAK TIPS   

Ingredients:

2 lbs Steak Tips salt/pepper onion powder NJS Fig Stout Bbq Sauce

Directions:

1) Season steak with evenly salt, pepper and onion powder then marinate steak for 30 minutes in the Fig Stout, using half the jar and saving the rest for dipping 2) Place steak on grill away from coals and grill for 6 minutes then flip and rotate steak 3) Continue to grill another 5-8 minutes or until desired temp

Helpful Notes:

Preheat Grill to medium high heat using indirect heat

ONE POT FIG STOUT CHICKEN   

Ingredients:

1 lb Chicken tenders, cubed 1 medium red onion, sliced into half moons 4-5 small new potatoes, cubed into ½ inch cubes salt/pepper/ginger for seasoning 3 tbsp Organic apple juice to deglaze the pan ½ a jar NJS Fig Stout coconut oil /olive oil for sauting Goat Cheese, crumbled , optional

Directions:

1) Season chicken with salt/pepper/ginger and then saute in 1-2 tsp coconut oil for 5-6 minutes or until browned evenly and remove from pan and set aside covered. 2) Add potatoes to the same pan and add 1 more tsp coconut then saute potatoes until fork tender 8-10 minutes, stirring frequently so they don’t stick to pan, cover the pan halfway thru to steam the potatoes 3) Add onions and continue to saute for 2-3 minutes, then add apple juice to deglaze pan and add chicken back to pan stirring to combine 4) Add NJS Fig Stout BBQ sauce and stir to coat potatoes and chicken. 5) Serve in a bowl and crumble some goat cheese on top ( OPTIONAL)

This is one of those dishes where you can sub in any veggie you have in the fridge or the ground for that matter. So feel free to use what you have on hand!!

FIG STOUT STEW WITH PORK TENDERLOIN   

Ingredients:

1 lb Pork Tenderloin, cut into chunks 7-8 small potatoes, peeled, cut into chunks 8 small carrots, sliced into discs 1 medium onion, roughly chopped NJS Fig Stout 3/4 of a jar Bacon, 6 slices, diced Spice rub, I made my own 1 can Ginger Beer 1 Cup Chicken broth Spice rub- 1 tsp salt 1 tsp paprika 1 tsp coriander ½ tsp black pepper 1 tsp chili powder **** More or less of each spice according to likes/dislikes 2 tbsp flour

Directions:

1) Mix spice rub ingredients in small bowl then add spice mix and flour to a Ziploc bag and add cut up tenderloin, shaking bag to coat pork 2) Using a heavy bottomed pot turn heat to medium and add bacon cooking until done 5-7 minutes then , remove the bacon with a slotted spoon to leave bacon grease… why not right… Add tenderloin and brown pork for 3-5 minutes or until nicely browned adding olive oil if needed 4) Add potatoes, carrots and onion and saute for 3-4 minutes or until onions start to turn translucent then add ginger beer to deglaze pan and add chicken broth 5) Turn up heat and bring to a boil, stirring to make sure to get up all the bits on the bottom, 2-3 minutes, then turn down heat to low and simmer for 25 minutes stirring halfway through 6) Add 3 heaping tablespoons of NJS Fig Stout bbq sauce and raise heat to medium for 6-8 minutes leaving cover off and stirring to make sure doesn’t stick to bottom of pot. 7) Remove from heat and add the rest of the NJS Fig Stout stirring to combine, serve with some crusty bread to sop up the sauce!!
